This is my pre-race day go to dinner:

Crack Salad

Spinach
Strawberries
Pecans
Red Onion
Whole Foods 365 brand Organic Honey Mustard dressing.

You won’t want to eat anything but this for a solid week. It’s that good. And it FEELS so healthy when you eat it too.

Lemon Rosemary Garlic Chicken

Put chicken breasts in a gallon sized ziplock bag. Add olive oil, lemon juice, fresh stalks of rosemary, fresh garlic. Massage into chicken. Marinate 2-24 hours.  Cook in sautee pan with juices from the marinade.

Sweet Potato Wedges

Preheat oven to 400.

Cut sweet potatoes into wedges.

Toss with olive oil, rosemary, red onions, fresh garlic, parsely, thyme, red pepper flakes.

Cook on oiled cookie sheet for 20-25 min, turn over, cook for 20 more minutes or until done.
